Description
This is a salad my Mom often made in the spring and summer months. It's cool, creamy,
crunchy and oh so easy to put together. Add your favorite shredded cheese, cubed baked
ham or crumbled bacon
(Just to mention a few) and make this great summertime salad your own.
Ingredients
4 cups frozen green peas
1 small carrot, shredded
½ red bell pepper, finely chopped
1 finely chopped red onion (about 1 cup)
½ cup finely chopped celery
½ cup Ranch Dressing
⅓ cup mayonnaise
¼ teaspoon dried oregano
¼ teaspoon freshly ground black pepper, or to taste
½ teaspoon Kosher salt, or to taste
Instructions
Cook frozen peas according to package instructions, then put peas in a calendar and rinse
under cold water to stop cooking and set aside. In a large bowl add the bell pepper,
celery,onion and carrot then toss to mix. In a small bowl combine the ranch dressing, mayo,
salt, pepper and oregano and mix well. Add cooled peas to the vegetables and toss to mix.
Add dressing and stir until well coated. Chill for at least 2 hours and serve.

Spice up your salad by adding hard boiled eggs, bacon, ham, and/or cheese
